
Wolf & Woman Syrah is a blend from three different vineyards that grow in schist, granite, and iron soils respectively, to showcase the diverse soils of the Swartland. All of the grapes were hand-picked separately, packed in crates, and rested in a cold room for 24 hours. Bunch sorting was done the next day, after which the grapes were transferred to open-top fermenters (100% whole bunch) where it cold-soaked for 3 days before natural fermentation started, supported by two to three punch-downs per day to promote extraction.
The wine spent a total of 16 days on the skins before we lightly pressed it. After this, 60% of the juice went to 500L old-oak barrels and 40% matured in concrete. The vintage was then allowed to mature for 10 months before it was racked, blended, and bottled.
